DESCRIPTION:Spice it Up!\n\nA well- stocked herb and spice cabinet and a judicial sprinkling can elevate your meals with tons of flavor and vitality. Learn to recognize the most used spices\, what you need to be ready to cook and make several blends\, rubs and pastes to take home. We will create some of the most beloved spice mixes from around the world and sample dishes that incorporate them. Learn about flavor profiles and what tastes good with what. End of class tasting will include herbal cordials and digestifs.\n \n\nAbout the Instructor\n\nFor twenty years Nanette Davidson designed and implemented the weekly cooking class curriculum for the John C Campbell Folk School. She has taught many classes including wood-fired oven management\, feasting on fruits and vegetables\, pie making\, preserving\, canning and fermenting\, and cuisines from all over the world. She has taught and demonstrated at the NC Arboretum\, the Mother Earth News Fair\, The Asheville Wine and Food Festival and the Clay and Cherokee County Farmers Markets. She wrote The Folk School Cookbook-Seasonal Favorites from the John C Campbell Folk School published in 2018 . She has a new blog\, www.brasstownpotluck.com\, which will feature recipes and food stories from her home in the western NC mountains.\n\nShe has long been a staple of our beloved Brasstown community\, and her love of teaching and enthusiasm for cooking is contagious!\n\nStudents will gain an in-depth understanding of herbs and spices\, their use in cooking\, and enjoy tastings and go home with their very own blends\, rubs and pastes.
