The Community Council of the Georgia Mountain Research & Education Center invites you to a free seminar on food preservation, using a pressure canner. Safe home canning of vegetables, meats and soup mixes requires the use of a pressure canner. The basic principles behind this recommendation and reasons for doing so will be covered in this seminar. Today's pressure canners offer a variety of features. Examples of several types will be shown and discussed. Step-by-step general directions for canning under pressure will be covered, with reasons provided for USDA and University of Georgia recommendations. Procedures for achieving high quality as well as safe foods will be taught. Descriptions of basic steps in preparing foods and packing jars for canning will also be discussed.
